Carbless Craze Cafe loves hearing success stories from their customers. At Maria Emmerich’s book signing last month, I met Kjerstna Davis, who was so excited to meet Maria, but also excited about Keto and her weight-loss success with the diet. I decided to introduce myself and ask her if she would mind sharing her story on the blog. She was more than happy to help, and hopes that it may inspire others.
So let's start with a little about yourself.
My name is Kjerstyna Davis I’m 27 and have lived in Ohio for over 10 years. I was born in Florida and have moved quite a lot growing up.
I’m getting married to my high school sweetheart this upcoming December in Marco Island Florida! After a decade of being together, it’s finally happening! His name is Nick and he’s finishing up his last few months in Nurse Anesthesia school, then we will be moving pretty much anywhere in the US! We will see!
When did you decide to start using a LCHF diet or keto diet?
I begun to use the keto diet in January 2018 this was right after I hit my weight of 192, and had my gallbladder removed.
How did you get going towards this lifestyle? Was it gradually or straight up, Im doing keto?
My fiancé Nick was my only motivator and with our wedding coming up I wanted to be healthier. However, he was the one who truly saved my life and encouraged me to keep up with keto and never give up. He’s a true hero.
Did you try any other diets before the ketogenic diet?
I haven’t really needed to diet prior. I was always in great shape, aside from me gaining the weight, which was due to eating badly up in Cleveland, and getting behind in working out. The only diet I have done before was the “military diet” but the keto diet is what really got me in shape and kick started it all! :) I used to just eat healthy, and one restaurant I went to was Ely’s!!!
What's a typical day of eating look like for you? Intermittent fast?
Yes, I typically eat at 1 (a small meal,) very low carb. Then drink only water throughout the day and when I finish at work I head to the gym. Then after my hour workout I have my dinner, and do not eat again until the next day at 1 in the afternoon.
Where did you look to find out about LCHF?Keto? Did you have a coach?
My fiancé found out about this diet when his friend in school was doing it and the anesthesiologist at the hospital talked highly of it. He wasn’t a coach, but he might as well have been. He’s been my biggest supporter throughout my journey. He truly kept my mind focused and motivated! He’s the best thing that’s ever happened to me!
What were some positive/negative things you started noticing with your health?
Only positive, I lost weight and felt so great about myself , week by week I’d lose more and it would give me that little bit of motivation I needed to keep going.
Any advice you would give to someone who is thinking about starting keto or wanting to make a health change?
I would highly recommend it, however, it is tough and it’s something in which you must realize going into, that it is a complete lifestyle change. Truly, the diet will help and benefit you, as long as you do it correctly and don’t give up, and you have follow the keto diet regularly!
How has Carbless Craze Cafe helped you with your goals?
It’s helped me hold off on sweets, and with the great people working there I’m always excited to go in. I always go in weekly and try new things but stick with my same breads, cookies, and cake!
Favorite menu items?
The Vanilla cake with frosting, and the vanilla cinnamon bread!!!! So good!!!!
I met you at Maria Emmerich's book signing, so what is a favorite recipe of hers that you have?
I have yet to use any at this moment, typically I eat the same things over and over again and change it up weekly. I have such a busy schedule so it’s hard to find time to sit down and cook something! I will soon though! My favorite meal that I cook is a grilled fillet with broccoli tossed in olive oil that is baked with seasoning in the oven or in the smoker!
Lastly, I know you are planning a wedding in December, I love winter weddings, and I know you have some weight-loss goals. Would you mind sharing your future goals?
Yes! We sure are busy planning! We are doing a destination wedding at the JW Marriott on Marco Island in Florida, so most of the plans are being taken care of by the hotel itself. We are now doing invitations, talking with DJ and florist, and we will be taking our engagement photos this June when we go down to get our marriage license for that county! Then in December we will drive down to Florida right after Nick graduates, and finally after a decade we will get married on the beach!
My future goals will be getting toned up and feeling great about myself, and once we move, we will both get a personal trainer to really help with getting our bodies fit! We are so excited to see where life is going to take us and after being together for over a decade we are excited for this next journey of being married together!
